Ayurveda and Cooking

you read it before this section.
Vata
The qualities of Vata to be light, dry, cold, and rough. Therefore,
your diet should include foods that are liquid or unctuous to balance
dryness, some "heavy" foods to balance the "light"
quality, foods that are smooth in texture to offset roughness, and foods
that are warm or hot to balance the cool nature of Vata. You may use the
chart below as a guide in terms of foods you should choose and foods that
you may want to stay away from. This is just a start. I recommmend that
you look at Amadea
Morningstar books.
I highly recommend "Ayurvedic Cooking for Westerners" which
I find to be the best book for our Western culture on cooking.

Pitta
The qualities of Pitta are hot, sharp, liquid, mobile, light, and oily.
therefore, your diet should include foods that are "heavy" to
balance the "light" quality, foods that are "cooling"
in nature to offset the fiery nature of Pitta. You may use the chart below
as a guide for you in terms of foods you should choose and foods that
you may want to stay away from. This is just a start.

The qualities of Kapha are oily, dense, cold, stable, smooth, heavy.

you in terms of foods you should choose and foods that you may want to
stay away from. This is just a start.
